This dish is visually beautiful enough to tempt even the pickiest eaters.

It’s picnic season! 

... although that statement is a tiny bit misleading, because in Jacksonville, we can get away with picnics in any month of the year. Granted, they may need venue changes, beach, park, backyard, etc. but all will do when you can spend time outside. My favorite item to make for picnics in any season, and all potlucks and regular dinners for that matter, is this green couscous. It is visually beautiful enough to tempt even the pickiest potluck-goers and it is delicious enough to keep people (or just you) coming back for more. Couscous is quick and easy to make and it is perfect served on its own or with any protein of your choosing. I make a big batch of it over the weekend and take it for lunch to eat at room temperature for a filling and tasty meal. It makes for a perfect picnic at my desk (ugh…)!
