Biryani Masala

Use this spice mixture in Kacchi Biryani and other dishes for an aromatic seasoning.

Ingredients

  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • ½ clove nutmeg (Jaiphal)
  • 2 pieces mace (Javitri)
  • 3 or 4 green cardamom pods
  • 2 small sticks cinnamon
  • 5 or 6 cloves

Instructions

Dry-roast all the spices in a skillet over medium heat until fragrant, being careful not to burn them. Allow to cool, then use a spice mill or coffee grinder to grind to a fine powder.
