Za'atar Spiced Fried Alligator

Serve with your favorite flatbread, crackers or as is. Alligator meat can be found at local fish markets.

Ingredients

  • 1 pound boneless alligator meat, diced into ¾-inch cubes
  • 5 cloves garlic, crushed
  • 3 tablespoons za’atar*
  • 1/2 cup buttermilk
  • 1 cup flour (seasoned with 1 teaspoon za’atar and ¼ teaspoon salt)
  • Oil for frying, such as vegetable or canola
  • *Za'atar is a Middle Eastern spice mixture consisting of oregano, thyme, toasted sesame seeds, sumac and salt.

Instructions

Combine alligator, garlic, za’atar and buttermilk in bowl and mix until alligator is evenly coated. Refrigerate alligator mix for a minimum of an hour, but not longer than 24 hours.

Heat oil to 350° in a deep enough pot to allow alligator pieces to float freely as they fry. Remove alligator pieces from the buttermilk mixture and toss pieces in the seasoned flour. Shake off excess flour and gently place into hot oil. Alligator will take about three to four minutes in the oil to cook. Do not overload the pot with pieces as it will cause the temperature to drop and the alligator will not be crispy. Remove the alligator pieces with a slotted spoon or ladle and place on a plate lined with paper towels to remove any excess oil. Sprinkle lightly with your favorite salt.
