Prior to opening The Island Grille in 2015, Chef Gary Maresca was a well-known culinary entity in Flagler Beach. From 2002-2013, he had built a following as the chef and co-owner of Blue at the Topaz restaurant, located in the same building as his latest venture in Flagler Beach. Fans of his previous establishment were relieved to see many of their favorite flavor combinations still on Chef Maresca's new menu, such as a wasabi horseradish honey butter crust on salmon and oysters. The addition of a full bar at The Island Grille allows for culinary creativity when it comes to craft cocktails. One thing that hasn't changed: the ocean view while dining on the deck. We checked in on Chef Maresca as he was getting ready for lunch service, on a day made for a leisurely beachside meal.

What is your culinary background? How did you get your start in the restaurant industry?

I started washing dishes when I was 16 and fell in love with the business. I went to culinary school some years later and put my dream of owning a restaurant on the beach in action.

How would you describe the menu at the Island Grille?

That’s a good question. My menu now is a fusion of many different things - basically I just compiled flavors and things I like to eat.

How do you incorporate local and seasonal foods onto the menu?

In addition to my menu, I run daily lunch and dinner specials. So guest options change everyday. Whatever fresh fish and unique produce I can get - that’s what’s for dinner.

What do you enjoy most about being part of the food community in Flagler Beach?

I’ve been a part of the Flagler Beach food community since 2002 when I first opened Blue. I most enjoy the reaction I get when people realize it’s still me in the kitchen all these years later.

What are the best-selling items at The Island Grille?

The Island Grille is most known for my Wasabi Salmon - something I literally dreamed about. It's a must have even for those who don’t care for wasabi or salmon! In addition to that, the daily fresh fish specials, the infamous blackened scallop salad and blueberry cobbler for dessert

What are your favorite ingredients to cook with and why?

Wasabi, soy, garlic and pineapple because I really enjoy Asian-infused flavors.
