Praise the Lard Artisan Butcher Workshop
This is a two-day professional course hosted at the Chop Shop in St. Augustine on the craft of charcuterie and whole-animal butchery. The goal is to share best practices from experts Chef Brian Polcyn and Michael Ruhlman to help keep charcuterie alive on the modern American menu. Over the course of two days, attendees see half a heritage breed hog butchered using European seam butchery techniques; half done USDA demonstrating how to retrieve charcuterie cuts.
Each attendee will receive one of Chef Brian and Ruhlman's books, a class booklet with recipes by Chef Brian and writings by Ruhlman, plus a cocktail hour and private dinner with Chef Brian and Michael Ruhlman at Preserved in St. Augustuine -- an opportunity for relaxed, one-on-one time with both chef and author. If artisan butchery is of interest, this workshop should not be missed.
