Chef Tom Gray

Born in Virginia, Tom was raised in Orange Park. After graduating from the Culinary Institute of America in Hyde Park, New York, he spent several years in professional kitchens in New York City, Los Angeles and Napa Valley. He returned to Jacksonville in 1999 and was the founding partner and executive chef /operating partner of Bistro Aix for 13 years. Tom and his wife/business partner, Sarah Marie Johnston opened Moxie Kitchen + Cocktails in the fall of 2013, followed by Town Hall in historic San Marco in the spring of 2017. He and Sarah Marie completed a rebranding of Moxie in January 2020, changing the concept to Prati Italia.
