Make these tarts ahead of time, then just heat up, grab and go in the morning.

Grab and go breakfasts that are satisfying and delicious are hard to come by for me. I love smoothies, frittatas and bagels but most of those still take effort in the morning and get boring pretty quickly. On most days it’s hard enough getting out of the house on time, even without cooking breakfast. Enter the mini breakfast tart. This is really eggy, a little edgy and can be refrigerated or frozen and then microwaved when you get to the office. I’m happy to report that the breakfast tart made my weekday mornings a little bit better. For an added variety, I prepared two different kinds – one classic with bacon, egg and cheese, the other with caramelized onions and balsamic. The pie crust can either be purchased or homemade.
