Cucumber and Radish Salad

This festive-looking salad makes a refreshing and healthy side dish during the holiday season.

Ingredients

SERVINGS: 4 Serving(s)
For the vinaigrette:
  • 2 large garlic cloves, finely chopped
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon maple or agave syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Your favorite herbs, fresh or dried, chopped
For the salad:
  • 1/4 small onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 3/4 cup thinly sliced radishes

Instructions

Whisk the vinaigrette ingredients together in a bowl. Add the sliced onions and marinate for 10 minutes. Add the rest of the ingredients, mix well and marinate for another 10 minutes in the refrigerator. Best served cold.
