Aquafaba is the leftover liquid in a can of chickpeas and is often used as a substitute for egg whites.

Ingredients

SERVINGS: 1 Cocktail
  • 2 ounces shiitake-infused pisco
  • 1/2 ounce lemon juice
  • 1/2 ounce lime juice
  • 1/2 ounce simple syrup
  • 1/4 ounce ginger honey
  • 3/4 ounce aquafaba
  • Ice
  • Angostura bitters, for garnish

Instructions

1. Add all ingredients except bitters to cocktail shaker. Shake aggressively with ice for 15 seconds then strain.

2. Remove ice and shake ingredients without ice for an additional 15 seconds.

3. Double strain into a chilled coupe glass. Garnish with bitters.
