Peanut Butter Blondies

With or without the chocolate chips, these blondies are complex and balanced.

Ingredients

  • 1 1/2 cups unsalted butter
  • 1 1/2 cups peanut butter
  • 2 1/2 cups sugar
  • 3 large eggs
  • 2 tablespoons vanilla extract
  • 3 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 cup chocolate chips, optional

Instructions

Preheat the oven to 325°. Grease and flour a 12x18-inch jelly roll pan. Combine butter and peanut butter inbowl of a stand mixer and beat until light and fluffy. Add sugar and mix until smooth. Add eggs and vanilla and beat on low speed until just combined. Add flour and baking powder and mix until uniform. If desired, split the mixture in half and add chocolate chips to one of the mixtures. Spread the mixture in prepared pan and bake for 30 minutes, until a toothpick inserted in the center comes out clean. Let cool to room temperature, slice and serve.
