Cheddar Herb Scones

After the dough has been cut, you can freeze these scones for later use. When ready to serve, bake at 375˚, adding a few extra minutes to the oven time.

Ingredients

SERVINGS: 8
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1-1/2 tablespoons baking powder
  • 1-1/2 teaspoons salt
  • 1/2 cup cold butter, cubed
  • 1-1/2 cups shredded Cheddar cheese, plus 1/2 cup for sprinkling on top
  • 1/3 cup chopped chives
  • 3/4 cup heavy cream
  • 1 egg

Instructions

1. Preheat oven to 375˚.

2. Combine flour, sugar, baking powder and salt in a large bowl. Add cubed butter, working it into the dry mixture with your fingers until pieces of butter are pea sized.

3. Add cheese and chives and incorporate into flour/butter mixture.

4. In a separate bowl or measuring cup, whisk together heavy cream and egg. Add to dry mixture, using your hands to combine until it just comes together and there are no dry pockets of flour.

5. Transfer dough onto a floured countertop and form it into a circle. The dough should be about ½-inch thick. Cut into 8 equal wedges.

6. Place scones onto a baking sheet and sprinkle with extra cheese. Bake for 25-30 minutes until golden brown.
