Stuffed Delicata Squash

Delicata makes a great substitute in recipes that call for winter squash.

Ingredients

SERVINGS: 2-4 Serving(s)
  • 2 small delicata squash
  • 2 cups Sage Turkey Stuffing*
  • 1/2 teaspoon nutmeg
  • 1/4 cup fresh grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • *If cooking the “stack” of 3 meals, you will have this leftover from Sage Turkey Stuffing with Cinnamon Sweet Potatoes

About this recipe

This recipe is one of three meals that are made with some of the same ingredients. Cook one or try cooking them as a “stack” of three to best utilize your time and ingredients. Start with Sage Turkey Stuffing with Cinnamon Sweet Potatoes. After cooking that, you will be part-way toward two other meals in the stack, this one for Stuffed Delicata Squash and Black Friday Brunch.

Instructions

Preheat oven to 425°.

Cut delicata squash in half lengthwise. Scoop out the seeds and loose strings using a spoon. Place squash halves in a small baking dish. Add about 1/4 cup water around the outside of the squash.

Add stuffing to a medium bowl. Sprinkle nutmeg and Parmesan cheese over the top, then stir to combine. Stuff each squash with this mixture, then top squash halves with additional Parmesan cheese.

Bake until squash is tender, about 30 minutes. Garnish with fresh parsley and enjoy. Serves 2 if cooking the “stack” of 3 meals. Serves 3-4 if cooking this meal only.
