Chef Manny Santana

Manny, a third generation culinarian, is the forager/produce buyer for Traders Hill Farm, one of the largest aquaponics farm in the nation. Previously he was chef de cuisine at Omni Amelia Island Oceanside and has also worked at Bellwether Restaurant and El Jefe in Jacksonville. His love for fermented foods was strengthened by taking a workshop with fermentation revivalist Sandor Katz.
