Brownies on the Barbie

Serves 12


Ingredients

6 tablespoons butter, melted

2 ounces unsweetened chocolate, melted

1 cup sugar

2 eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

Ice cream, to serve

Fresh mint, to garnish


Instructions

If using a gas grill, preheat to medium heat (350° to 400°) on one side. For charcoal grills, prepare as you normally would with briquettes and adjust the vents as needed to maintain an internal temperature of 350° to 400°.


Grease a 10-inch cast-iron pan and set aside.


Combine melted butter and chocolate in a medium mixing bowl. Whisk in sugar until fully

combined. Whisk in eggs and vanilla. Stir in flour until combined. Pour batter into prepared pan and smooth the top. Grill, covered, until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Check every 5 minutes after 20 minutes. Remove from heat and let cool in the skillet. Serve a la mode with your favorite flavor ice cream and garnish with mint.
