Cucumber and Radish Salad

Serves 4


Ingredients

For the vinaigrette

2 large garlic cloves, finely chopped

1/2 cup balsamic vinegar

1/4 cup olive oil

1 teaspoon maple or agave syrup

1/2 teaspoon salt

1/4 teaspoon black pepper

Your favorite herbs, fresh or dried, chopped


For the salad

1/4 small onion, thinly sliced

1 cup cherry tomatoes, halved

1 medium cucumber, thinly sliced

3/4 cup thinly sliced radishes


Instructions

Whisk the vinaigrette ingredients together in a bowl. Add the sliced onions and marinate for 10 minutes. Add the rest of the ingredients, mix well and marinate for another 10 minutes in the refrigerator. Best served cold.
