Ingredients

- 11 cups flour
- 4 cups sugar
- 4 tablespoons plus 2 teaspoons baking powder
- 4 teaspoons salt
- 5 cups sweetened shredded coconut
- 6 cups milk (whole or 2%)
- 4 eggs, lightly beaten
- 8 tablespoons avocado oil
- 4 tablespoons coconut extract (or vanilla extract)
Instructions
1. Preheat oven to 350°.
2. Spray three large loaf pans with non-stick spray or butter.
3. Sift flour, sugar, baking powder and salt into bowl. Add coconut and blend gently.
4. Combine milk, eggs, oil and extract in another bowl and mix well. Add to dry ingredients all at once, stirring until just blended. Do not overmix.
5. Bake in prepared pans for 1 hour. Let pans cool 10 minutes before removing bread
