These root vegetables are well-known for helping with eyesight, but don’t underestimate their additional benefits!
- 1/2 cup pecans, toasted
- 2 cups carrot tops, chopped
- 1/2 cup cilantro or basil, chopped
- 3 cloves garlic
- 1/2 cup olive oil
- Salt and pepper, to taste
Combine all ingredients in a food processor and blend until smooth. To make sandwiches, spread pesto on toasted bread and add your favorite toppings: grated carrots, cauliflower slices, red pepper slices, cheese, etc.
