Carrot Top Pesto Tartines

Don’t throw away those carrot top greens! Instead, make pesto and tartines.

Ingredients

  • 1/2 cup pecans, toasted
  • 2 cups carrot tops, chopped
  • 1/2 cup cilantro or basil, chopped
  • 3 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper, to taste

Instructions

Combine all ingredients in a food processor and blend until smooth. To make sandwiches, spread pesto on toasted bread and add your favorite toppings: grated carrots, cauliflower slices, red pepper slices, cheese, etc.
