Teriyaki Tofu

Perfect with your favorite vegetables, this is also great with tempeh.

Ingredients

  • 1 tablespoon tamari sauce
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons mirin
  • 1 teaspoon garlic powder or 2 garlic cloves, finely minced
  • ¼ cup vegetable oil
  • 1 tablespoon rice vinegar
  • 1 pound extra-firm tofu, pressed and cut into 1-½-inch pieces
  • 1 medium zucchini, sliced in thin rounds
  • 1 medium red pepper, cut into small chunks
  • 1/2 pound muchrooms, stems removed
  • 1/4 cup toasted sesame seeds

Instructions

Whisk all marinade ingredients together in a small bowl. Alternate tofu and vegetables on skewers. Brush  marinade on vegetables and tofu while grilling, then finish with toasted sesame seeds.
