This makes a quick weeknight meal: filling, fast and delicious.

Two weeks ago I returned from traveling in New York and Spain. It was an incredible trip – we ate too many wonderful meals and explored some beautiful places. Naturally my favorite activities when traveling revolve around food and mealtime; this trip was no different. My favorite meals in Spain were in Seville. One was at conTenedor – a slow food restaurant with a new menu each day, specializing in fresh, local fare. Another favorite was La Brunilda, a popular tapas place with a line around the block 30 minutes before opening. The meals at both were impeccable. Fresh veggies, great meats and extensive wine lists at every meal made it hard to come back home. Since returning, though, I have found that (for once) my appetite is not endless. I have been craving salads and less filling meals. I think my body is still reeling from the vacation lifestyle. This soba noodle salad was a quick weeknight meal: filling, fast, and surprisingly delicious (coming from a salad hater ;))
