Carrot Top Pesto Tartines

Makes 4-6 Serving
Ingredients
1/2 cup pecans, toasted
2 cups carrot tops, chopped
1/2 cup cilantro or basil, chopped
3 cloves garlic
1/2 cup olive oil
Salt and pepper, to taste
Instructions
Combine all ingredients in a food processor and blend until smooth. To make sandwiches, spread pesto on toasted bread and add your favorite toppings: grated carrots, cauliflower slices, red pepper slices, cheese, etc.
