Deconstructed Potato Salad

Serves 6-8
Ingredients
¼ cup vegetable oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon garlic powder
½ teaspoon salt
1 pound red potatoes, cut into ½-inch rounds
1 medium red onion, cut into thick slices
½ pound bacon, cut into thick slices
Instructions
Whisk all marinade ingredients together in measuring cup. Brush on skewered potatoes, onions and bacon, then grill until cooked.
