Blueberry Shrub Vinaigrette

This zippy vinaigrette features a tangy fruit shrub, preserving the fresh, seasonal flavor of blueberries and making it available throughout the year.

Ingredients

SERVINGS: 1 Cup(s)
  • 1/4 cup Congaree and Penn Blueberry-Meyer Lemon shrub
  • 2 teaspoons Dijon mustard
  • 1 clove garlic
  • 1 teaspoon honey
  • 1/2 shallot (small) diced
  • 3/4 cup vegetable (neutral) oil

Instructions

In a mixing bowl or food processor combine shrub, mustard, garlic, honey and shallot. While mixing slowly, add oil until emulsified. Season with salt and pepper to taste.
