Parmesan and Prosciutto scone sandwich with egg
Parmesan and Prosciutto scones are delicious on their own, but also make an excellent start to the perfect breakfast sandwich.

Two of the things I love most in this world are playing games and hosting parties. Games, as in Scattergories, Bananagrams, Things, and my new fave: Telestrations. Parties as in all my friends come to my apartment, eat food, drink drinks, and play games. My apartment is only slightly larger than a shoebox but there is something so wonderful about decorating, making the food, and then having everyone over to enjoy it with me! The most recent occasion for a gathering was Galentine’s Day – or in my case Palentine’s day because everyone was invited (gals and guys).

I always conveniently seem to block out the hour or so before the party where I am running around like a chicken with its head cut off, so I never remember to plan accordingly for the next time. This party was no different. 10:00 am rolls around and I realize I only have 2/3 of my food items prepared. Lucky for me these scones only take 30 minutes start to finish and boy, are they crowd pleasers!

This recipe came from my mom’s kitchen as many of the best have, and they are liiiiterally the easiest things in the world to make. I recommend setting a few aside to make breakfast sandwiches with later.
