Also called "haymaker's punch" and "ginger water," switchel is a drinking vinegar made using fresh ginger.

Ingredients

SERVINGS: 1 Quart(s)
  • 3 to 4 cups filtered or distilled water, divided
  • 1/4 cup organic ginger, cleaned and sliced*
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons freshly squeezed lemon juice

Instructions

1. In a small saucepan, bring 1 cup water to a boil. Add ginger.

2. Remove from heat and let steep for at least 10 minutes, or until completely cool.

3. Pour ginger water and ginger into a 1-quart jar along with the remaining water.

4. Add the honey, apple cider vinegar and lemon juice. Close jar tight, shake well and store in refrigerator overnight.

5. Switchel keeps 1 week in refrigerator. Remove ginger after 4 days – the longer the ginger infuses, the stronger the flavor will become.

*If ginger is not organic, be sure to peel before using.
