How to Make the Perfect Grilled Cheese
There are so many different ways to make grilled cheese that no two people may share the same opinion as to what makes the “perfect” sandwich. However, no matter how you slice it, there are a few key elements to consider that will make any grilled cheese “perfect.”

BREAD
White, multigrain and sourdough breads are all good options. Thinner slices will allow the cheese to melt more quickly and evenly, while thicker slices are better for a heartier sandwich with lots of toppings.
CHEESE(S)
While the type of cheese you choose has a lot to do with the flavor you’re going for, it’s important to note that lower quality cheeses often contain more oil and will become greasier when melted, while higher quality aged and smoked cheeses may be drier and not melt as well. Try mixing them for balance.
SPREAD
There is some debate over using butter, which provides a better flavor, or mayonnaise, which allows for more even browning since it doesn’t burn as easily. However, there is no debating how to best apply it: for the best results, apply a thin layer of your preferred spread evenly to your bread – NOT your skillet.
TOPPINGS
No matter which toppings you prefer, keep the following in mind to help make your grilled cheese perfect: toppings should complement the cheese, rather than distract from it; wet toppings like pickles, tomatoes or jams should be used sparingly to avoid sogginess, and the more you use, the heartier the bread should be.
CRISPNESS
Aim for an even, medium to dark toast on both sides of your sandwich for the perfect crispiness. This will also help your bread hold its own if you pile on the toppings - especially wet ones.
