Miya’s Kitchen: Savory Bread Pudding Notes
In the late spring and early summer months, when the days are long and the real heat has yet to kick in, I think it is prime time for gatherings spent outside with friends and family over delicious food, strong beverages and fun conversation. With my two sisters graduating high school and college respectively, there was no shortage of excuses for said gatherings this spring. From evening poolside fiestas to morning brunches, there were many occasions to turn unwilling guests into guinea pigs for new recipes.
One that I was pleasantly surprised by was this Savory Bread Pudding. It was light and fluffy, yet rich and satisfying. This dish is versatile enough for a brunch, lunch or dinner appetizer and even a side dish. The filling is eggy, cheesy and flavorful. It can easily be turned into a quick meal for one with an over easy egg on top or a lemon oregano chicken thigh. I thought I was too much of a purist to turn my dessert bread pudding into something savory, but this is a winner — unique and delicious.
