Teriyaki Tofu

Serves 4
Ingredients
1 tablespoon tamari sauce
1 tablespoon toasted sesame oil
2 teaspoons mirin
1 teaspoon garlic powder or 2 garlic cloves, finely minced
1/4 cup vegetable oil
1 tablespoon rice vinegar
1 pound extra-firm tofu, pressed and cut into 1-½-inch pieces
1 medium zucchini, sliced in thin rounds
1 medium red pepper, cut into small chunks
1/2 pound mushrooms, stems removed
1/4 cup toasted sesame seeds
Instructions
Whisk all marinade ingredients together in a small bowl. Alternate tofu and vegetables on skewers. Brush marinade on vegetables and tofu while grilling, then finish with toasted sesame seeds.
