- 1-1/2 pounds turnips, peeled and diced (about 3 cups)
- 3 tablespoons unsalted butter
- 1 cup water
- Kosher salt
- 2 tablespoons white miso
- 2 tablespoons honey
Instructions
1. Place the turnips, butter, water and salt in a large skillet. Bring to a boil, cover and reduce heat. Simmer gently for 20 minutes.
2. Uncover and reserve about ¼ cup of cooking liquid from the skillet. Increase heat to medium-high and cook until remaining liquid has almost evaporated and turnips are tender, about 5 minutes.
3. In a small bowl, whisk reserved cooking liquid with miso and honey until smooth. Pour back into the skillet, combine thoroughly into turnips and cook for 1 minute to heat through.
