A quintessential cheesy spread served in Bavarian biergartens alongside pretzels and hearty bread. It’s prepared by combining aged soft cheese, butter, spices and a dash of beer to give it a tangy, malted flavor.

Ingredients

SERVINGS: 6
  • 6 ounces camembert with rind
  • 6 ounces triple cream brie with rind
  • 4 ounces (1 stick) softened butter
  • 2 tablespoons Hungarian paprika
  • 2 teaspoons smoked paprika
  • 2 teaspoons caraway seeds
  • 1/3 cup Warsteiner, or any other pilsner
  • Salt and black pepper, to taste
  • Thinly sliced red onions and chopped chives, for garnish

Instructions

1. Break the camembert and brie into small chunks.

2. Combine all ingredients except garnish in a stand mixer with a paddle attachment. (If a stand mixer isn’t available, use a hand mixer and beat ingredients together in large bowl.) Beat on medium speed until smooth.

3. Transfer to serving bowl and top with red onions and chives.

4. Refrigerate for a few hours to let tastes meld together and serve with sliced onions, pretzels, crackers and beer.
