For the pastry
- 1-1/2 cups unsifted flour
- Pinch salt
- 1 stick unsalted, cold butter cut into cubes plus 1 teaspoon unsalted butter
- 2 to 4 tablespoons water
For the Filling
- 1 teaspoon butter
- 6 ounces bacon, thinly sliced
- 1 large yellow onion, thinly sliced
- 4 ounces grated Swiss cheese
- 4 ounces grated Cheddar cheese
- 3 eggs
- 2-1/2 cups whole milk
- 1/2 cup flour
- 1 generous teaspoon nutmeg
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
1. To make pastry, toss together flour and salt. Cut butter into flour. Add water until dough comes together, up to 4 tablespoons.
2. Roll dough out and line a quiche pan or a 9- or 10-inch pie pan.
3. Preheat oven to 400°.
4. To make filling, heat a saute pan. Add butter to pan and fry bacon and onion over medium heat until light brown, about 2 to 3 minutes. Spread bacon and onion in the unbaked pastry shell. Spread grated cheeses on top of bacon and onions.
5. Mix eggs, milk, flour, nutmeg, salt and pepper in a bowl. Pour mixture over ingredients in the pie pan.
6. Bake for 25-35 minutes until the quiche is brown. Let sit 10 minutes before slicing.
