Spicy Cilantro Lime Sweet Potatoes

Around Down to Earth farm they get overwhelmed with sweet potatoes in the fall and are always looking for unique ways to use them. Farmer Brian's friend Donna Fritsche introduced him to this savory method for dealing with their tuber abundance.

Ingredients

SERVINGS: 6-8
  • 6 medium sweet potatoes (similar-sized for even roasting)
  • 1/2 cup unsalted butter, room temperature
  • Zest and juice of 1 lime
  • Juice of 1 tangerine
  • 1-2 teaspoons chipotle peppers in adobo, chopped (more or less, depending on how spicy you like it)
  • 2 teaspoons smoked paprika
  • 1 large bunch cilantro, chopped and divided
  • 1 teaspoon salt

Instructions

1. Preheat oven to 425°.

2. Roast sweet potatoes on a sheet pan until soft, 45-60 minutes. Allow to cool, then scoop out sweet potatoes and place in large bowl.

3. Mash potatoes together with butter, lime zest and juice, tangerine juice, chipotle peppers, paprika, salt and half the cilantro.

4. Place in baking dish and bake at 400° for 15 minutes for flavors to come together. Garnish with remaining cilantro.
