Elderberry Gummy Bears

If you want to forage your own elderberries in Northeast Florida, you can find them in early summer, then again in late summer and early fall.

Ingredients

  • 1 cup elderberry juice (from pureed and strained berries)
  • 1/2 cup honey
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons tapioca starch
  • 1/3 cup apple juice
  • 2 tablespoons gelatin
  • 1 teaspoon pectin

Instructions

In a medium saucepan, bring a small amount of water to a low boil and place a glass or metal bowl over the top of the pan (creating a double boiler). In a small bowl, mix elderberry juice, honey, sugar and lemon juice. Slowly add tapioca starch and mix well with a whisk until there are no lumps. Pour tapioca/juice mixture into the bowl set on top of the saucepan and stir gently. Continue cooking for 20 minutes, stirring gently every few minutes.

In the meantime, add gelatin to apple juice and mix thoroughly. Allow mixture to “bloom” for at least 5 minutes.

When tapioca mixture is heated (translucent in color) add pectin and mix gently (there should be no lumps). Cook for 5 minutes. Add gelatin mixture and stir gently until the mixture is thoroughly incorporated. Continue heating and stirring for 5 minutes. Turn heat off but leave bowl over warm water. Lightly oil the gummy bear molds and carefully fill each bear with mixture. Place filled molds in the refrigerator until thoroughly cooled.
